When I was growing up, there was nothing more stressful or feared during the holidays than grandma’s fruitcake. I know that my experience is not unique. Fruitcakes are feared all over the country. The everlasting fruit cake is the bane of any holiday season. Fruit and flower baskets, Christmas ornaments, cheesy family cards, eggnog – all of these meet appreciation wherever they are given. Those tough, indestructible fruit cakes alone ruin the holiday season!

I have always been a fan of cooking – especially baking. I love to bake cakes and cookies, and I can’t figure out why in the world such a disgusting cake would become such an entrenched tradition. In my whole life, I have only met a handful of people who like fruitcakes – and many of them are fruitcakes themselves. I set out to discover if there were such a thing as a good tasting fruit cake. Were they always these indestructible things that you could send in the mail, leave sitting for weeks, or even stack papers on top of without damaging in the slightest? Were they ever, in other words, intended to eat?

I haven’t been able to find out where the much-maligned fruit cake originates, but I have discovered that there are many different recipes. Most of the time, people are familiar with the bland, generic one. These cakes are dense, dry, and easy to preserve. In this day and age where we can have fresh food whenever we want, we are a little bit spoiled. Few of us see the usefulness of having such a durable holiday fruit cake, but my guess is that, in earlier times, they were pretty handy. In the winter when everything was dead and the ground was cold, having something sweet and doughy that you could snack on all year would be a rare luxury. So much for the uselessness of the fruit cake!

I have also discovered that there are some cake and fruit recipes that are actually quite good. If you add a little bit of brandy, for example, you can turn a bland fruit cake it is something delicious. You can also add coffee, cream, or many other additions. This healthy cake has not only pineapple but a topping rich with coconut and nuts for an added surprise. A crunchy topping bakes o this cake. This is a one step pineapple cake that is twice as delicious with a butter sauce over the top of the warm cake. This cake is best served warm.

Ingredients:

  • 2 cups flour
  • 1 cup sugar
  • 1 tsp soda
  • 1 tsp salt
  • 1 can undrained crushed pineapple (131/2 oz. can)
  • 1 tsp vanilla (not imitation)
  • 2 eggs

Topping:

  • cup brown sugar cup coconut
  • cup chopped nuts
  • Sauce:
  • cup unsalted butter at room temperature
  • cup milk
  • cup sugar
  • tsp vanilla (not imitation)

Directions:

  • Oven at 350
  • 9×12 inch cake pan buttered on the bottom and then lined with parchment paper
  • Mix all the cake ingredients together. Do not mix with Topping and Sauce ingredients just the cake.
  • Beat it for 2 minutes just well incorporated. Too long beating will make this cake tough.
  • Pour the batter into the pan. Sprinkle the mixed topping ingredients over the top
  • Bake 45-50 minutes or to when it springs back when touched. In the center.
  • Melt the butter is a small saucepan.
  • Add milk, sugar, and vanilla.
  • Pour over the warm cake and let cool. This cake will served out of the baking pan.

Mini loaf pans allow you to have more time with your family and friends. If you can pick a day when you actually do have time to prepare a meal or even two, you could have meals all ready to go, and that would just need to be heated as needed.

Chocolate Cake – Guilt or Shame?

Do you have self control when it comes to a really yummy looking chocolate cake with chocolate buttercream frosting? I sure don’t. And the more I feel like people care about what I’m eating (out in public that is) the more I lose my self-control. Why is that? Am I focusing on the wrong thing here?

If I were to focus on how good I’d feel after saying “no” to the dessert, I’d have no trouble saying “no”, right? I don’t know…I’m confused. Why do I even have to struggle with this in the first place? Skinny people eat what ever they want. If I were taught to eat whatever I wanted growing up, I’d probably not have a weight problem today.

So you know what? I’m going to try to learn how to say “It’s okay to say yes”, and “it’s okay to say “no thank you”, and either way, feel fine about myself. I can still have good eating habits, eat what I want and stay healthy…I mean…why not?
